Segregation of duties..... you open the bill and write the checks; your spouse puts them in the stamped envelope and drops them in the mail. Ensures you are both aware the bill was paid.
Two-person-authentication... a safe-deposit-box requires two keys to open. Unless both you and a bank employee turn the keys together, it will not open. The employee witnesses that you did not open somebody else's box.
