How many CPE credits would these be worth? Would both be eligible? Although they both cover roughly the same material, they are really quite different.

The basic metric is "hours of effort". Two different references on one topic not only both count, but it is a good strategy because hearing it twice and from two different sources increases the depth of understanding.
The gotcha though is that CC only requires 45 CPEs over its triennial cycle. Therefore, the Simplilearn all by itself will max you out. And, you can not "save them up" for a future CISSP due to the rule that the CPEs must be earned DURING the Certification's triennial cycle.
